Snowballs

 

This is a brilliant idea for using up left-over Christmas Pudding.

Re-steam the pudding, or microwave it if you're in a hurry, until it is soft and pliable. Then shape it into small balls and dip them into well beaten strained raw egg. Roll the balls in ground almonds or fine stale cake crumbs and deep fry them in a slightly smoking hot oil of your taste, until they are golden brown. Put them on a dish and place half a glacé cherry and a strip of angelica on the top of each one. Dust them thickly with icing sugar and serve with brandy butter or vanilla sauce. Lovely!
