Turkey Stock

 

Put the turkey giblets into a medium sized pan, cover them with cold water cover and bring to the boil. Then, for each pint of water, add a chopped onion, a chopped celery stalk and a chopped carrot. You can also add any seasoning you may fancy, such as bay leaf, bouquet garni or whatever..

Then, cover the pan and allow the stock to simmer for 2 or 3 hours (This is not an exact science) and subsequently strain the liquid into a bowl. When it is cold, remove any fat from the top of the stock.
